Vintage selected by hand in boxes of 5kg. Individual manual laying of the bunches in a natural drying room for their passaging (5-6 months). Selection and manual pick-up. Full pressing in traditional spindle press. Static settling and subsequent controlled fermentation at low ambient temperature for several months. Minimum of 6 months of barrel aging. Clarified by decanting and racking. Bottled in March 2014. More than 4 years of bottle aging.
